SPICEDLAMB SOUP WITH ROTI
SERVES 4-6

(^1) / 3 cup(80ml)sunfloweroil
4 (250geach)Frenchedlamb shanks
4 cups(1L)beefstock
1 eachstaraniseandcinnamon quill
4 cardamompods,bruised
400mlcoconutcream
2 tspnigellaseeds
Coriander sprigs and warm roti, to serve
CURRYPASTE
6 eschalots,roughlychopped
3cmpiece(15g)ginger, peeled,
roughlychopped
3cmpiecegalangal,peeled,
roughlychopped
5 garliccloves,roughlychopped
3 longgreenchillies,roughlychopped
(^1) / 2 cup(125ml)sunfloweroil
(^1) / 4 tspeachblackmustardseeds, fennel
seedsandfenugreekseeds
(^1) / 2 tspcurrypowder
(^1) / 2 tspgroundcumin
2 tsp ground turmeric
Forcurrypaste,placeeschalot,ginger,
galangal,garlic,chilliand^1 / 4 cup(60ml)oil
in a foodprocessor.Whiz,scrapingdown
side,toforma paste.Meanwhile,heat
remaining^1 / 4 cup(60ml)oilin a medium
non-sticksaucepanovermedium-highheat.
Addmustard,fennelandfenugreekseeds.
Cook,stirring,for1-2minutesoruntilseeds
pop.Stirin currypowder,cumin,turmeric
and^1 / 2 tspwhitepepper.Cook,stirring,for
4-5minutesoruntiloilseparates.Transfer
pastetoa smallbowlandcoolcompletely.
Heat2 tbsoilin a largefrypan.Addlamb
andcook,turning,for5-6minutesoruntil
brownedallover.Transfertoa largeplate.
Addremaining2 tbsoiltopanwithcurry
pasteandcook,stirring,for1-2minutesor
untilfragrant.Stirin stock,1 cup(250ml)
waterandspices.Addlambandcoconut
cream.Increaseheattohighandbringto
boil.Reduceheattolow,coverandsimmer
for2-3hoursoruntilmeatfallsfrombone.
Discardbonesandflakemeatintolarge
pieces.Seasonsouptotaste.Dividesoup
andlambamongbowls.Scatterwithnigella
seeds and coriander. Serve with roti.
