225gdriedmanicottiorcannelloni
pasta,roughly chopped in half,
crosswise
(^1) / 4 cupfirmlypackedchopped parsley,
plus extra to serve
Preheatovento245°C.Placethebeef
mince,porkmince,tomatopaste,harissa,
Worcestershiresauce,cuminandground
coriander in a large roasting pan about
38cmx 23cmin size,with^1 / 4 cupoftheoil,
two-thirdsoftheparmesan,two-thirds
ofthepecorino, 13 / 4 tsp salt flakes and
plentyofpepper.
Placethecarrot,onion,tomatoand
garlicin a foodprocessorandblitzuntil
finelychopped.Addtothebeefmixture
andmixtocombine.Transfertothe
ovenandbakefor 25 minutesoruntil
brownedontopandsizzling. Reduce
temperatureto190°C.
Usea forktobreakthemeatapart
thoroughly,stirringit intotheliquidthat
hasbeenproduced.Pourthechicken
stockandcreamontopofthemeat
mixture,thenaddthepasta.Stirthe
pastaintothesauceuntilthoroughly
coated;youwanttogetallofthepasta
wetsoit doesn’tburn.Pushasmuch
ofthepastaunderthesurfaceofthe
sauceaspossible(you won’t be able
tosubmergeit all).
Bake,stirringhalfwaythroughcooking,
for 25 minutesoruntilpastais tender.
Removepastabakefromtheoven,
stirintheparsley,sprinklewith
theremaining20gparmesanand
pecorinoanddrizzlewiththeremaining
1 tbsoil.Bakefor8 minutesoruntil
thetopis crispin partsandbeginning
tobrown.Sprinklewithextraparsley
andsetasidefor 10 minutestocool
slightly,sothesauce soaks in,
before serving.
