inventivetakeonthecuisinejazzedupwitha Japanesetwist.
AtHubert,PepperellshiftedgearstoexploreFrenchfareinfused
withChineseandKoreaninfluences– thinkescargotwith
XOsauceandkimchigratin.Butlatelastyearthe chef returned
tohisearthyinfluencesat Alberto’sLounge.
Theconvivialeateryis describedas“aneighbourhoodItalian
restaurantandwinebar”butthatneighbourhoodcouldonlybe
SurryHills.Asthefollowingrecipesshow,Pepperellis always
tweakingtheclassics.Hisfrittomistois spicedwithcurrypowder,
whilehispoachedpeppersareannointedwithprawnoil.It’sItalian
foodreinterpretedbysomeonewhogrewupeatingAsiandishes.
Notsurprisingly,thechefhaslatelybeenshakingthingsup.
“I’vebeengettingintoa lotofKoreanfoodforstaffmealsat the
restaurant,”hesays.Andif hehasguestsvisitingathome,he
reinsit rightback.“Itsnormallysimplefare– grilledseafood
andvegetables.”Andit’sservedwithhomemadekombucha.
Alberto’sLoungeis partoftheSwillhouseGroup,knownfor
Hubert,Frankie’s,BaxterInnandShadyPines.OwnersAntonand
StefanForteandTobyHiltonhavetheMidastouchwhenit comes
toorchestratingcrowd-pleasingvenues.WithPepperellbehind
the pans at two of them, they also deliver memorable food.
