Begin this recipe at least 5 hours ahead.


3 cups(450g)tipo‘00’flour
12 eggyolks,plus 2 whole eggs
1 tbsoliveoil
1 tbsmilk
Unsaltedbutter,totoss
Extra virgin olive oil, to serve


PASTAFILLING
11 / 4 cups(300g)ricotta
11 / 4 cups(100g) finely grated parmesan
1 egg


CHICKENBRODO(BROTH)
2kgchickenwings
1 pigtrotter,cutin half
2 celerystalks,chopped
2 whiteonions,chopped

1 bulbgarlic,halvedhorizontally
10 blackpeppercorns
1 sheetkelp(fromAsian food shops)

Preheatovento220°C.Forthebrodo,
roastthechickenwingsfor25-30minutes
oruntilgolden.Placethechickenwings
andremainingingredientsin a large
saucepanoverhighheat.Coverwith3L
coldwaterandbringtotheboil.Reduce
heattolowandskimoffanyfatthatrises
tothesurface.Simmergently,skimming
andtoppingupwithwaterif needed,for
3-4hours.Strainstockthrougha finesieve
intoa smallsaucepanandplaceoverhigh
heat.Bringtotheboil,reduceheatto
medium-lowandsimmerfor15-20minutes
oruntilyouhave1.5Lstockleft(or2L,for
bollitomistorecipe,left).Seasontotaste
andkeephotuntilreadytoserve.
Meanwhile,tomakethepasta,place
flourwitha pinchofsaltflakesin thebowl
ofa standmixerwiththedoughhookand
mixonlowspeed.Combineyolksand
eggsina jugandpourintotheflour
mixturewitholiveoilandmilk.Mixuntil
combinedandsmooth.Enclosein plastic
wrapandrestfor2 hoursinthefridge.
Forthepastafilling,placeallingredients
in a largebowl,seasontotasteandstir
well to combine. Cover and refrigerate.
Dividepastadoughinto4 equalpieces.
Workingwith1 pieceofdoughata time,
placeona lightlyflouredsurfaceandpress
toflattenslightly.Startonthethickest
settingonpastamachine.Runthedough
through3 times,foldingit inhalfeach
time.Keeprollingthroughthesettings,
reducingthicknesseachtimeandwithout
foldingin half,until1mmthick.
Workquicklysothepastadoesn’tdry
outandcoverpastanotbeingusedwith
a dryteatowel.Workingwith1 pasta
sheetata time,cutinto7cmsquares.
Workingwith1 squareata time,place
1 tspofricottafillingin thecentreofthe
square.Foldpasta,cornertocorner,to
createa triangle.Brushthebottomtwo
cornerswitha littlewater,thenfoldunder
andpresstoseal.Repeat with remaining
pastaandfilling.
Filla largesaucepanthree-quartersfull
withwaterandbringtotheboiloverhigh
heat.In batches,cookcappellettifor
2-3minutesoruntilcookedthrough.
Transfertoa largeheatproofbowl,season
andtossgentlywithbutter.Divideamong
bowlsandspoonoverhotbroth.Drizzle
with extra virgin olive oil, to serve.

1 daikon,slicedinto1.5cmthickrounds

ANCHOVYMAYONNAISE
1 cup(300g)wholeeggmayonnaise
1 tbsthymeleaves,finelychopped
8 anchovyfilletsin oil, drained,
finely chopped
SALSAVERDE
8 anchovyfilletsin oil,drained
4 garliccloves,crushed
1 bunch flat-leaf parsley
(^1) / 2 bunchchervil
1 cup(250ml)extravirgin olive oil
Juice of 1 lemon
Placethecoldchickenbrodoand
cotechinoin a largesaucepanoverhigh
heat.Bringtotheboil,reduceheattolow
andcookfor2 hours.Addthechicken,
carrotanddaikon.Returntotheboil.
Reduceheattolow.Simmer,skimming
anyfatthatrisestothesurface,for25-30
minutesoruntilmeatis cooked.Remove
meatfromliquid.Standona restingrack.
Meanwhile,fortheanchovymayonnaise,
placeallingredientsin a smallbowl,season
totasteandstirtocombine.Setaside.
Forthesalsaverde,placeallingredients
ina foodprocessorandwhizuntil
combined.Seasontotasteandsetaside.
Slicethecotechinointo1.5cmrounds.
Placethecotechinoandchickenin shallow
bowlswiththedaikonandcarrot.Spoon
overthebrodoandservewithanchovy
mayonnaise and salsa verde alongside.

Tomakethecurrysalt,placethecurry
powderwith2 tbsseasaltflakesin a small
bowlandtosstocombine.Setaside.
Workingin batches,placethezucchini,
anchovies,prawnsandcalamariandslived
lemonona largetray.Dustwithtapioca
flourandshakeoff excess flour. Place on
separatetrays.
Preheatovento100°Candline 2 large
oventrayswithbakingpaper.
Half-filla deep-fryerorlargesaucepan
withvegetableoilandheatto180°C
