WHOCANRESISTa fresh,crunchysaladwitha killerdressing?Thesecrettoa great
salad,I think,is thedressing.Thetangy,sweet,spicysauceonthissaladdeliversa
hugeburstofflavourandis fantasticallytastywhenpouredoverthetopofthissuper
seasonalmeal.It still keeps it simple, though, and works well with the flavour of the
greenpapaya.
Thecrabin thisdishmakesit reallyfreshandinteresting,anddeepfryingit means
yougetthatnicecrunchthatleavesyouwantingmore.Crabsaremucheasiertocook
athomethanyoumightthink,butyoucouldalsomakethis dish with fish, tofu, calamari
or even just have the salad on its own... it’s that good!


BLUESWIMMERCRAB


WITHPAPAYA SALAD


SERVES 4-6


1 cup(200g)riceflour
1 cup(250ml)chilledsoda water
4 eggs,lightlybeaten
Vegetableoil,todeep-fry
4 blue swimmer crabs, cleaned, quartered

PAPAYASALAD
Juiceof2 limes, plus extra wedges
toserve
2 longredchillies(optional), thinly sliced
2 tspfishsauce

(^1) / 2 tspcastersugar
1 smallgreenpapaya,peeled,shredded
(^1) / 4 buncheachmint,coriander
andThaibasil,leavespicked
3 Asian(red)eschalots,thinly sliced
Fried shallots, to serve
Tomakethebatter,placeflour,
sodawater,egg,2 tspsaltand1 tsp
groundwhitepepperin a large bowl
andwhisktocombine.
Half-filla largesaucepanwithvegetable
oilandheatto180°C(a cubeofbreadwill
turngoldenin 90 seconds when the oil is
hotenough).
Workingwitha one-quarterpieceof
crabata time,dipintothebatter,draining
theexcess,anddeep-fryfor3-4minutes
untilgoldenandcrisp.Removewith
a slottedspoon,drainonpapertoweland
season.Repeatwiththeremainingcrab.
Forthepapayasalad,placelimejuice,
halfthechilli(if using),fishsauce,sugarand
(^1) / 2 tspsaltflakesin a largebowlandwhisk
untilcombined.Addpapaya,herbsand
eschalot,andtosstocombine.Place
papayasaladona servingplatterand
topwithcrab.Scatterwithfriedshallots,
remainingchilliand extra lime wedges
to serve.
