1 lemon,scrubbed
15 mintsprigs(40g),plus^1 / 4 cuplightly
packedshreddedmintleaves
5 garliccloves,peeled
700glargepotatoes(suchasYukon
Goldordesiree), peeled and cut into
3cmchunks
50gunsalted butter
75mlmilk
90g sour cream

FORTHEASPARAGUS


21 / 2 tbsunsaltedbutter

(^1) / 4 cup(60ml)oliveoil
800gasparagus,woodyendstrimmed
6 anchovyfillets,finelysliced
3 garliccloves,thinlysliced
(^1) / 2 cup(50g)flakedalmonds,
lightlytoasted
11 / 2 tsp dried mint
Forthepotatoes,usea peelerto
removethezestfromthelemonin
largestrips.Cutthepeeledlemoninto
sixwedgesandreserveforserving.
Filla mediumsaucepanwithsalted
water,addthelemonzest,mintsprigs
and garlic, and bring to a boil over
highheat.Addpotatoandboilfor
15 minutesoruntil cooked through.
Drainwell.
Returnpotato,lemonzestand
garlictothepan,discardingthemint
sprigs.Addbutter,milk,sourcream
and^3 / 4 tspsaltandmashuntilsmooth
andcreamy.Seasontotastewith
saltandpepper.Coverand set aside
untilreadytoserve.
Meanwhile,fortheasparagus,
meltthebutterandoilin a largefrypan
overmedium-highheatuntilbutterand
oilstarttofoam.Addasparagusand
cook,turningfrequently,untilcooked
throughbutretaininga slightbite,
5-8minutes,dependingonthickness.
Turnofftheheatandusetongsto
transferasparagustoa plate.Addthe
anchovy,garlicanda pinchofsalt
tothepan,returntomediumheat,and
stircontinuouslyuntilthegarlicstarts
togogolden,1-2minutes.Remove
fromtheheat,stirin almondanddried
mint,andimmediatelyspoonthe
mixtureintoa bowltostopcooking.
Dividethemashedpotato
amongservingplatesandtopwith
theasparagus.Spoonthebuttered
almondmixtureoverthetop
andserveimmediatelywith
a sprinkleoffreshmintand
lemon wedges alongside.
