MISOGRILLEDAVOCADO


WITHSESAME SOBA NOODLES


SERVES 4


2 avocados,halvedlengthwise
2 tspsesameoil,plusextra to brush
270gsobanoodles
2 mediumzucchini, thinly sliced
intorounds
125gpunnetenokimushrooms,
trimmed,separated
1 tbshulledtahini
1 tbstoastedsesame seeds,
toserve


(^1) / 2 cupcorianderleaves
Dried chilli flakes, to serve


GLAZE


1 tbsmaplesyrup

(^1) / 4 cup(60ml)mirin
(^1) / 3 cup(80ml)soysauce
11 / 2 tbsricevinegar
Juiceof1 lime
1 tsp white miso paste
Fortheglaze,placethemaplesyrup,
mirin,soysauceandvinegarin a medium
saucepanovermedium-highheat.
Reducefor5-6minutesoruntilslightly
thickened.Coolandwhiskthroughthe
limejuiceandmiso.Seasontotaste.
Heata chargrillpanovera highheat.
Brushavocadowithextrasesameoil.
Grill, cut-side down, for 2 minutes or until
lightlycharred.Removefromtheheatand
brushcutsidewitha littlemisoglaze.
Cookthesobanoodlesaccordingto
packetinstructionsandplacein a bowl
withthezucchini.Tossthemushroomsin
1 tspsesameoilandgrillfor1-2minutes
oruntiljustwilted.Placein thebowl with
sobanoodlesandzucchini.
Placetheremainingmisoglazein a
bowlwithtahiniandremaining1 tsp
sesameoil.Seasontotasteandwhiskto
combine.Setasideuntilreadytouse.
Dividethesobanoodlesamongbowls,
topwiththegrilledavocadoandmiso
glazedressing.Scatterwithsesame
seeds,coriander and chilli flakes,
to serve.
