250g(2 cups)plain(all-purpose)flour
3 tspbakingpowder
2 tbssugar
2 eggs,lightlybeaten
3 cups(750ml)buttermilk
75gunsaltedbutter,melted,plusextra
togrease

31 / 2 cups(770g)sugar
175gDutchcocoapowder,sifted
75gunsaltedbutter
Combineflour,bakingpowder,sugarand
a pinchofsaltin a bowl.Whiskin eggs,
buttermilkandmeltedbutter.
Forthesauce,placesugarin a panwith
31 / 2 cupswateroverlowheatandcook,
stirring,untilsugardissolves.Simmerfor
15 minutes, then whisk in cocoa powder.
Simmer for 10 minutes, add butter and stir
until dissolved. Set aside to cool.
Heat a large non-stick frypan over a
medium heat and brush a small portion of
butter over the base. Ladle^1 / 3 cup (80ml)
batter per pancake into the pan. Cook for
2 minutes until bubbles appear on the
surface. Turn over and cook for another
minute. Transfer to a plate and keep warm
while cooking remaining pancakes. Serve
with chocolate sauce.
