MAKES 8 INDIVIDUAL TRIFLES

1 titanium-strengthgelatine leaf

(^1) / 2 cup(125ml)milk
2 tbschocolate-hazelnut spread
1 eggyolk
1 tbscastersugar
240gdark(70%)chocolate,finelychopped
600mlpure(thin)cream,whipped
400gblackgrapes,separated into
smallbunches
2 tbshoney
1 tbsredwinevinegar
2 staranise
200g(about^1 / 4 ofa mediumloaf)
panettone,tornintomediumpieces
100ghazelnuts,roasted, skin removed,
roughly chopped
SHERRYJELLY
4 titanium-strength gelatine leaves
2 cups(500ml)PedroXiménez sherry
(from liquor stores)
Forthesherryjelly,placegelatineleavesin
a bowlofcoldwatertosoftenfor5 minutes.
Placesherryand200mlwaterin a small
saucepanovermediumheatandbring
toa simmer.Squeezeexcesswaterfrom
gelatineandaddtothesaucepan,stirring
untilgelatinehasmelted.Dividejelly
mixtureamongeight 11 / 2 cup(375ml)
glasses.Chillfor2-3hoursoruntilset.
Tomakethechocolatemousse,place
themilkandchocolate-hazelnutspreadin
a saucepanovermedium-lowheatand
bringtojustbelowtheboil.Meanwhile,
whisktogethertheeggyolk,sugarand
a pinchofsaltuntilcombined.Place
chocolatein a heatproofbowl,andplace
gelatineleavesin a separatebowlofcold
waterfor5 minutestosoften.Whenthe
milkmixtureis ready,graduallypourinto
theeggmixture,whiskingconstantly,until
combined.Returnmixturebacktothe
saucepanovermedium-lowheat.Cook,
stirringcontinuously,untilthemixture
thickensandcoatsthebackofa spoon.
Removecustardfromtheheatandset
aside.Squeezeexcesswaterfromgelatine
andaddtothecustard.Stirtocombine,
thenpourmixtureoverchocolate.Without
disturbing,allowthecustardtomeltthe
chocolatefor2 minutes,thenwhiskuntil
smooth(ifthechocolatehasn’tfully
melted,returntheentiremixturetoa
saucepanoverlowheatandgentlystirto
meltthrough).Allowthemixturetocool
slightly,thengentlyfoldthroughthe
whippedcream.Dividemousseamong
glasses,spooningontopofthejellylayer.
Preheatovento180°C.Placegrapes,
honey,vinegarandstaranisein a bowl,
seasonwithsaltandpepper,andtossto
combine.Placeona bakingtraylinedwith
bakingpaperandroastfor 12 minutes
oruntilsoftandsticky.Setasidetocool.
Toptrifleswithpanettone,hazelnutsand
grapes,drizzlingoveranycooking syrup,
and serve immediately.
