1 cup(145g)hempseeds
(fromhealthfoodshops)
1 cup(155g)golden or brown flaxseeds
(linseeds)

(^1) / 2 cup(40g)psylliumhusk
(fromsupermarkets)
3 tbscoconut flour, plus extra
todust
8 eggs
1 tbsapplecidervinegar
1 tspsesameoil
1 tspbicarbonateofsoda
11 / 2 tsp fine sea salt
Placethehempseedsandflaxseedsin
a bowl,thenpourover1 cup(250ml)hot
waterandstirwell.Allowtosoakfor
1 houratroomtemperature(theseeds
will expand and absorb the water).

Preheattheovento170°C.
Greasea 20cm× 10cmloafpanand
linethebaseandsideswithbaking paper,

a foodprocessorandwhizfor2 minutes,
scrapingdownthesideregularlytoensure
themixblendsevenly,oruntila wetdough
forms.Addthepsylliumhuskandcoconut
flourandwhizuntilwellcombined.Add
theeggs,applecidervinegar,sesameoil,
bicarbonateofsodaandsalt,andblend
forabout1 minutetoforma thickdough.
Placethedoughinthepreparedpan
andpatdown.Bakefor1 hour 30 minutes,
rotatingthepanhalfwaythroughsothe
loafcooksevenly.Tocheckif thebread
is cooked,inserta skewerinthecentre;
if it comesoutclean,it’sready.Allowthe
breadtocoola littleinthepanbefore
turningoutontoa wireracktocool
completely.Cutintothickslicestoserve.
Storeinanairtightcontainerinthe
fridgeforupto5 daysorinthe freezer,
sliced, for up to 3 months.
