MEANING‘ALLMIXEDu p’,shakshukaorshakshoukais oneofmyfavourite
dishestomake(andeat!).Somesayit originatesfromYemenandothersclaim
itsrootsarein theOttomanEmpire.Andofcourse,withmyLebanesebackground
I’vecomeacrossmanyversionsofthisdish,mostlyeatenin a breakfast-style
mezzewithadditionsofdatemolassestoastandlabneh.Myrecipeis a super-quick
versionwhichtakesadvantageofthesameflavoursI adore.Thesaladthatit is
servedwithis brilliant– thecombinationofheatandzestworkssowelltogether.
Andalthoughcommonlyeatenforbreakfast,if you’relikeme,you’dloveit fordinner,
too.Thereis nothingquitelikedevouring this dish on a cold rainy night, served hot
with Lebanese flatbread. Delicious!
SHAKSHUKAWITHDATES AND
PRESERVED LEMON
SERVES 4
(^1) / 4 cup(60ml)extravirginoliveoil
1 largebrownonion,thinlysliced
2 garliccloves,thinlysliced
(^1) / 2 tspcuminseeds
1 redcapsicum,seeds removed, cut into
2cmstrips
2 longredchillies,seeds removed,
thinlysliced
1 tbsbrownsugar
2 bayleaves
4 thymesprigs,leavespicked,chopped
1 tbseachchoppedparsleyandcoriander
2 x 400gcans cherry tomatoes
4 eggs
Charred flatbread, to serve
TAHINIYOGHURT(MAKES125ML)
100gGreekyoghurt
1 tbstahini
Lemon juice, to taste
DATEANDPRESERVEDLEMONSALAD
10 medjooldates,pitted,cutintostrips
2 preservedlemons,finelychopped
2 greenchillies,seedsremoved,sliced
(^1) / 4 cuplooselypackedflat-leafparsley
(^1) / 4 cup (60ml) extra virgin olive oil
Forthetahiniyoghurt,placeallingredients
in a smallbowl,seasonandstirtocombine.
Meanwhile,tomaketheshakshuka,
heatoilina largefrypanoverhighheat.
Addonion,garlicandcumin,andcookfor
4-5minutesuntilonionhassoftened.Stir
in chilli,sugarandherbs,andcookfora
further5-10minutes.Addtomatoesand
season.Cook,stirring,for12-15minutes
untilthickened.Discardbayleaves.
Make4 gapsin shakshukamixtureand
crackaneggintoeach,sprinklewithsea
salt,coverwitha lidandcookona lowheat
for4-5minutesuntileggsarejustset.
Forthesaladcombineallingredients
ina largebowlandmixtocombine.
Scatterparsleyovershakshukaand
servewithtahini yoghurt, flatbread
and salad.
