fordessert.Thatis,untilgrandmaor‘sitha’comesoutwithcoffeeandtea.
Andthencomethebiscuits!Thenextthingyouknow,you’vedevoureda whole
trayofcookieswhilesippingyourcoffeeandyoudon’tevenknowhow
it allhappened.ThiswasthecaselastEasteratourplacewiththesecrackedcookies
- youstartandyoucan’tstop.Onthatnote,feelfreetodoubletherecipeif required!
Thesecookiesarenamedfortheir‘cracked’finish.Andwhiletherearethose
wholovecrunchycookiesandthosewhopreferthechewyvariety,thisone
is chewyinsideandcrunchyontheoutside.Thekeytomakingthesecookies
justrightis toslightlyundercookthem. Remember the cookies continue to cook
evenafteryou’vebakedthem!

Begin this recipe at least 4 hours ahead.
1 cup(150g)plainflour
(^1) / 2 cup(50g)Dutchcocoapowder, sifted
50gpecans,finelychopped
1 tspbakingpowder
(^3) / 4 cup(165g)castersugar
(^1) / 3 cup(80ml)extra virgin olive oil
2 largeeggs
1 tspvanillaextract
Icing sugar, for rolling
Ina mediumbowl,whisktogetherthe
flour,cocoapowder,pecans,baking
powder,^1 / 4 tspsaltandcastersugaruntil
combined.Ina separatebowl,whisk
togethertheoliveoil,eggsandvanilla
extract.Addtheflourmixtureintothe
oliveoilmixtureandstiruntilwell
combined.Transfertoa largecleanbowl
andcoverwithplasticwrap.Refrigerate
for4-5hoursorovernight.
Preheatovento180°C.
Linea largebakingtraywithbaking
paper.Dividethedoughinto 12 pieces
androllthemintoballsusingthepalmof
yourhands.Rollthedoughin icingsugar
generouslyuntilcompletelycoatedand
thenplaceonthepreparedbaking tray.
Bakefor12-15minutesuntil
cookieshavecracked and puffed up
intoa mound.
Allow to cool slightly before serving.
