3 eggplants(about1 kgin total)
Seedsof1 pomegranate
60gpinenuts,toasted
Largehandfulsofparsley and mint leaves
Juiceof1 lemon
3 tbsextravirginoliveoil
1 tbspomegranate molasses
Pinch of sumac
Forthesalad,placetheeggplantsdirectly
overthegasflameofyourstoveorona
barbecueovercoals,andcookforaround
10 minutes,turningfrequently,untilthe
skinis charredandthefleshis softand
collapsed.Transfertoa dishand,when
coolenoughtohandle,peelanddiscard

Combinetheflour,bakingpowderandsalt
in a largebowl.Eitherusingyourhandsor
a standmixerwitha doughhook,mixin
thebutter.Slowlypourin milkand150ml

thedoughbyhand,tipthedoughontoa
well-flouredboardandkneadforaround

doughin plasticwrapand allow to rest for
atleast 30 minutes.
Dusta cleanworksurfacewithflour,
dividedoughinto8 ballsandrolloutinto
2mm-thickrounds.Heata largenon-stick
frypanovera mediumheatandcookthe
piadinafor 90 secondsoneachsideoruntil
lightlygolden.Transfertoa plateand
repeatwithremainingdough.Fillthe
piadinawithdesiredfilling(seebelow).

Coveronehalfofthepiadinawitha few
piecesofbuffalomozzarellaandslicedfig.
Drapeoversomeprosciuttoandtopwith
somebasilleavesandrocket.Drizzlewith
extravirginoliveoilandseasonwithsalt
andpepper.Foldthe piadina over, cut in
halfandserve.

In a large frypan, warm 2 tbs extra virgin
oliveoil.Add3 roughlychoppedgarlic
clovesandsautegentlyuntilsoft.Adda
pinchofdriedchilliflakesandthecimedi
rapa.Dragtherapaaroundthepanto
coat.Seasonwithsaltandallowtocool
briefly.Coveronehalfofthepiadina with
somecimedirapaandtopwith
stracciatella(ormozzarella).Drizzlewith
oliveoil,thenfoldthe piadina over, cut in
half and serve.

1 vanillapod,split,seeds scraped or 1 tsp
vanillabeanpaste
150mloliveorneutralvegetableoil
1 cup(70g)shredded coconut, plus extra
tosprinkle
270gself-raisingflour,sifted
3 mashedripebananas (about 300g total)
200ml buttermilk
LEMONICING
Finelygratedzestandjuiceof1 lemon
21 / 4 cups(270g)pureicingsugar, sifted,
plus extra if needed
Preheatovento180°C.Greasea 21cm
roundcakepanwithbutterandline base
andsidewithbakingpaper.
Ina largebowl,whiskeggsandsugars
togetheruntilpaleandlight.Addvanilla
anddrizzlein theoil,whiskingtocombine.
Alternately,andin smallbatches,addthe
shreddedcoconut,flour,bananaand
buttermilk,mixingwellbetweeneach
addition.Pourbatterintopreparedpan
andbakefor1 hour 20 minutes,oruntila
skewerinsertedin thecentrecomesout
clean.Coolin panfora fewminutes,then
invertontoa wireracktocoolcompletely.
Fortheicing,combinethelemonzest
andjuicewiththeicingsugar,whisking
untilsmooth.Theicingshouldberunny
enoughtopourbutthickenoughtocover
thecake.Addmoresugartothickenif
needed.Pouricingoverthecakeand
generouslyscatterwith extra shredded
coconut to serve.
