saysgavehim“goosebumps”,andthishas
encouragedmetokeeptrying to eliminate
wastein thekitchen.
Usingingredientswewouldnormally
throwawayis a challenge,butit forcesus
tobecreative.It’samazingwhatdishes
canbecreatedwithoverripebananas,
stalebread,vegiescraps,evenleftovers.
Thisdessertusesbananaskinsblended
withcaramelforanintenseflavour.Some

PEANUTANDBREADCRUMB
2 slices(60g)stalewhitesourdough,
cutinto1 cmpieces,toasted
50groastedsalted peanuts, roughly
chopped
2 tbs pure icing sugar, sifted
Preheatovento180°C.
Forthechocolatesauce,placethe
breadina bakingtrayandtoast,tossing
occasionally,for8-10minutesuntil
toastedandlightlygolden.Placecream,
milkandtoastedbreadintoa medium
saucepanovermediumheat.Bringtoa
simmerandstirtocombine.Removefrom
theheatandstandfor4-5minutes to
soakandsoftenthebread.
Meanwhile,tomakethebanana-skin
caramel,placetheTop’N’Fillina small
saucepanovermediumheat.Heat,
stirringcontinuously,for6-8minutesuntil
heatedthrough.Transfertoa blender
withthereservedbananaskinsandblend
untilsmooth(adda touchofhotwaterif
neededtohelpblendthemixture).
Strainthrougha finesieveandseason
witha generouspinch of salt. Refrigerate
untilneeded.
Reheatthebreadandcreammixture
overmediumheat.Placethechocolate
andcocoapowderina bowl,andstrain
thebreadmixturethrougha sieveover
thechocolateandcocoamixture.Donot
stir,allowthechocolatetomeltfor
5 minutes.Whiskvigorouslyuntil smooth.
Keepwarm.Discardsolids.
Forthepeanutandbreadcrumb,
placethebreadonanoventrayand
toastfor8-10minutesuntillightlygolden
andtoasted.Coolcompletely.Place
ina foodprocessorandpulseuntila
coarsebreadcrumb.Transfertoa bowl
withremainingingredients and toss to
combine.Setaside.
Place3 bananahalvesonthebaseof
eachbowl.Topwithscoopsofvanillaice
creamanddollopsofthecaramel.Pour
overthewarmchocolatesauce,sprinkle
withpeanutandbread crumbs and serve
immediately.
