(^1) / 2 cup(125ml)whitewine
11 / 2 tbsgood-qualitywhitewinevinegar
(^1) / 4 cup(60ml)extravirgin olive oil, plus
extratodrizzle
(^1) / 4 cupeachlooselypackedmint leaves
andparsleyleaves,torn
4 babycucumbers, thinly sliced
widthwise
(^1) / 3 cup(80g)’ndujapaste(substitute
1 driedchorizo,finelychopped)
80ggood-qualityaioli,orasdesired
6 thicksliceschargrilled sourdough,
to serve
Rinsethemusselsunderrunningwater
tocleanthem.Placea largesaucepan
overhighheat.Oncethepanis super
hot,addthemusselsandwhitewineand
coverwitha lidimmediately.Cookfor
3-5minutes,shakingthepanoccasionally,
untilthemusselshaveopened.Discard
anythatremainunopened.Drainthrough
a finesieve,reserving the cooking liquid
forthedressing.
Removethemusselsfromtheshells
andintothereserved liquor. Set aside.
Discardshells.
Tomakethevinaigrette,whiskthe
vinegar,oiland^1 / 3 cup(80ml)ofthe
cooledcookingliquidina bowl,season
totasteandsetaside.(Makesapprox.
180ml).Addtheherbs,musselsandhalf
ofthecucumbertothedressing.
Meanwhile,placea smallfrypanover
medium-lowheatanddrizzleina little
extraoliveoil.Addthe’ndujatothepan.
Cook,stirringfrequently,for8-10minutes
untilbrowned.Drain on a piece of paper
towelandcool.
Justbeforeserving,drainmusselsfrom
dressing.Placea dollopofaioliontoeach
sourdoughsliceandtopwiththemussels
andremainingcucumber.Spoonover
withdressingandsprinklewith’nduja.
Season to taste. Serve immediately.
