OAT& TAHINI COOKIES
MAKES 20

80gsoftenedunsalted butter, cut into
2cmcubes
50gpackeddark-brownsugar

(^1) / 2 cup(110g) caster sugar
1 egg
(^1) / 2 tspvanillaextract
60ghulledtahini
(^1) / 3 cup(50g)plainflour
(^1) / 2 tspbakingpowder
140grolledoats,roughly chopped in a
foodprocessor
1 tspfinelygratedorange zest (from half
a smallorange)
(^2) / 3 cup(100g)blanchedhazelnuts,
toasted,choppedinto5mmpieces
1 tbstoastedwhitesesameseeds
100gplainhalvah,brokenintoabout
20 piecesroughly,2cmwide
(^1) / 3 cup60gdark chocolate, roughly
chopped
Preheattheovento200°C.
Placebutterandbothsugarsinthe
bowlofa standmixerfittedwitha paddle
attachment(orusea hand-heldelectric
mixer).Mixonmediumspeedfor
2-3minutesuntillightandfluffy.Add
egg,vanillaand 11 / 2 tbswaterand
continuemixinguntilcombined,then
blendinthetahini.(Youmayneedtostop
themachineandscrapedownthesides
ofthebowlwitha spatula a few times to
help it combine.)
Ina mediumbowl,whisktogetherflour,
bakingpowder,^1 / 4 tspsalt,oats,orange
zest,hazelnutsandsesameseeds.
Addthedryingredientstothestand
mixerbowlandmix on low speed until
wellblended.
Linetwobakingtrayswithbakingpaper.
Form 20 roughballsofdough(theyshould
beabout4-5cmwide)andarrangeon the
preparedtrays,about4cmapart.
Bakefor7-8minutes,rotatingthepans
halfwaythrough,andthenremovefrom
theovenwhilethecookiesarenotquite
cooked.Placea pieceofhalvahin the
middleofeachcookieandreturntothe
ovenforanother4-5minutesuntilcookies
aregoldenbrownaroundtheedgesand
thehalvahhasstartedtomelt.Remove
fromtheovenandsetasidetocoolfor
5 minutes,thentransfer to a wire rack to
coolcompletely.
Placechocolatein a mediumheatproof
bowlandplaceovera panofsimmering
water,takingcarethatthebaseofthebowl
is nottouchingthewater.Cookchocolate,
stirringoccasionally,untilmelted. Remove
fromtheheatandsetaside.
Transferthecookiesbacktooneofthe
bakingsheetssotheyfitsnuglytogether.
Usinga teaspoon,drizzlethemelted
chocolateoverthecookiestocreatethin
stripes(orzigzags)allin thesame
direction.Don’tworryaboutbeingexact
withthisasthecookiesshouldlookrustic.
Setasideforthe chocolate to harden,
then serve.
