200mlextravirgin olive oil, plus extra to
drizzle
3 eggplants,cutinto4cm wedges
2 tbstomatopaste
400gcanchoppedtomatoes
400gcanchickpeas,drainedandrinsed
11 / 2 tspeachground cumin, turmericand
paprika
1 cup coriander leaves, roughly chopped
Placecauliflower,potatoand2 wholegarlic
cloves in a saucepan and cover with cold
for 10 minutes,stirringoccasionally,oruntil
saucehasthickened.Returneggplantto
thepan,stirringtocombineandcookfor
afurther3 minutesoruntilwarmed
through.Removefromtheheat,stir
throughcorianderandremaining lemon
juice.Checkseasoning.
Preheatovengrilltohigh.Spoon
eggplantmixtureintoa 6-cupcapacity
(1.5L)ovenproofdish.Topwithcauliflower
mashanddrizzleoverextraoil.Placeon
thehighestshelfandgrillfor5-10minutes
until golden. Serve immediately.

100gbutter
1 leek,washedandthinlysliced
1 celerystick,finelychopped
1 garlicclove,crushed
(^1) / 4 cup(60ml)drywhite wine
1 tbsplainflour
1 cup(250ml)purecream
2 tspwholegrainmustard
500gbonelesssalmon fillets, cut into
3cmpieces
Finelygratedzest of 1 lemon and
juiceof^1 / 2
(^1) / 4 cupdillleaves,chopped
2 frozenbutterpuffpastry sheets,
partiallythawed
1 egg, lightly beaten
Preheatovento200°C(180°Cfanforced).
Meltbutterin a largenon-stickfrypan
overa mediumheat.Whenbutterstartsto
foam,addleek,celeryandgarlic,and
season.Cook,stirringregularly,for
7 minutesoruntilsoft.Addwineand
reducebyhalf.Stirin flour,scrapingthe
bottomofthepanwitha woodenspoon
for2 minutes,thengraduallystirin cream
andmustard.Bringtotheboilandcook,
stirringregularly,for3-4minutesuntil
slightlythickened.Removefromheatand
setasidetocoolfor5 minutes.Stirthrough
salmon,zest,juice,dill.Checkseasoning.
Meanwhile,place1 puffpastrysheet
directlyontopofanotherandlightlyroll
with a rolling pin to create a double layer.

transfertoa bowlandsetaside.Repeat
withremainingoilandeggplant.
Heatremainingoilin a largedeepfrypan
overa mediumheat.Addcrushedgarlic
andcookfor 30 secondsuntilfragrant,
thenaddtomatopaste,stirringconstantly
for1 minute.Addcannedtomato,
chickpeas,cumin,turmeric,paprikaand
lemonzest.Season,thenadd^1 / 2 cup
(125ml)water,stirtocombineandbringto
the boil. Reduce heat to low and simmer
