panbackoverhighheatandbringtothe
boil.Reduceheattomediumandsimmer
for25-30minutesuntilreducedby
one-thirdandliquid is slightly syrupy and
thickened.

bakingpaper.Usinga smallsharpknife,
cutaroundthehamshank,thencarefully
runtheknifeundertheskinandaround
theedgeoftheham.Gentlyliftofftheskin
in 1 piecebyrunningyourfingersbetween
therindandthefat.Discard skin. Trim fat
to5mm-thickallover.
Studthecloves,if using,alloverthe
ham.Placein preparedroastingpanand
pourglazeallover.Roastfor 30 minutes,
thenremovefromovenandbastewith
glazeandjuices.Repeatroastingand
bastingevery 30 minutesfor2 hoursor
untilglazehasdarkenedandcaramelised.
Removehamfromovenandrestfor
