2 eachlargeonions,carrotsandcelery
stalks,choppedinto large chunks

5 garlicbulbs,peeled
3.7kg(6-point)beefribroast, French
trimmed,fatremoved
Extravirginoliveoil,to drizzle
(^2) / 3 cup(160ml)port
2 cups (500ml) good-quality beef stock
SAUSAGESTUFFING
100ggood-qualitybeefsausages
2 tsp sage leaves, finely chopped
YORKSHIREPUDDING(MAKES 12 YORKIES)
1 cup(250ml) milk
4 eggs
1 cup(150g)plainflour
Vegetable oil, to drizzle
Preheatovento220°C.
Scatterchoppedvegetables,thymeand
garlicevenlyoverthebaseofa large
flameproofroastingpanandplacebeefrib
roastontop.Drizzlevegetablesandbeef
with oil and season. Roast on the bottom
ColinFassnidgeandAnthonyPuharicharegoing
alloutthisChristmas,bowingdown to a regal
roast that goes against tradition.
shelfoftheovenfor1 hour 15 minutesfor
mediumoruntilcookedtoyourliking.
Forthesausagestuffing,placeall
ingredientsin a bowl,seasonandmixto
combine.Divideinto 12 portions.Setaside.
FortheYorkshirepuddings,placeall
ingredientsin a blenderandwhizuntil
smooth.Transfertoa jugand stand for
10-12minutestosettle.
Greasebaseandsidesofa non-stick,
12-holecupcakepan.Drizzleenoughoil
intoeachholesothatyouhave2mmin the
base,alongwitha portionofthesausage
mixturebrokenintosmallpieces.Placetray
onthetopshelfoftheovenfor5-6minutes
untiltrayandoilareveryhotandthe
sausagemixtureis browned.
Dividebatteramongcupcakeholes.
Returntoovenandbakefor18-20minutes
oruntildeepgolden,puffedandcooked
through.Removefromtrayandseason
withsalt,standonpapertoweland season.
Keepwarmuntilreadytoserve.
Removeroastfromoven.Transferbeef
toa platter,coverlooselywithfoilfor15-20
minutesbeforeserving.Placetheroasting
panovermedium-lowheat.Addtheport
andreducebyhalf.Stirin stockandbring
totheboil.Transfertoa blender,taking
careoftheheat,whiz(inbatchesif
necessary)untilsmooth.Seasontotaste
andkeephotuntilreadytoserve.
Servebeefona platterwiththestuffed
Yorkshirepuddings and port gravy on
the side.
