TERIYAKI POTATO TOT KEBABS

8 ounces frozen potato tots
Vegetable oil, for brushing
1 cup cubed ham steak
(or canned pork product)
1 red bell pepper, cut into 1-inch pieces
1 cup pineapple chunks
Teriyaki glaze, for drizzling
1.Preheat the oven to 450 ̊. Spread
the potato tots on a baking sheet
and bake until golden and crisp,
30 to 35 minutes.
2.Meanwhile, brush a large nonstick
skillet with vegetable oil and heat over
medium-high heat. Add the ham and
bell pepper and cook, stirring occasionally,
until browned, about 5 minutes.
3.Thread the potato tots onto 4 skewers,
alternating with the ham, bell pepper and
pineapple. Drizzle with teriyaki glaze.
