1 Heata saucepanovermedium-high
heat, add couscous and stir to toast

(1-2minutes).Add500ml(2cups)water
anda pinchofsalt,bringtotheboil,
reduceheattomedium,coverand
simmeruntiltender(8-10minutes).
Drainexcessliquidandsetaside.
2 Meanwhile,cookbeansinboiling
saltedwateruntilal dente(2minutes).
Processpistachios,mint,parsley,garlic,
rind,juiceandoilina foodprocessor
untilfinelychopped.Seasontotaste.
3 Combinecouscouswith¾ofthe
pistachiodressing.Servetoppedwith
beans,appleandradish.Drizzlewith
extradressingandtop with extra herbs
and pistachios.
