1 kgsmallsebagopotatoes,scrubbed
2 garlicbulbs
250 ml(1cup)vegetableoil
400 gmcandicedtomatoes
2 tspsmokedpaprika
1 tspchillipowder
2 tbspextra-virginoliveoil,plusextra
todrizzle
Vegetableoilfordeep-frying
¼ cupflat-leafparsleyleaves
Aïoli,toserve (see wagyu recipe,
opposite)


1 Boilpotatoesina largesaucepanof
boilingsaltedwateruntiltender(20-25
minutes).Drainandsetasidetocool.
2 Meanwhile,tomakeconfitgarlic,
removeexcesspaperyskinfrombulbs
andplaceina saucepanwithvegetable
oil.Bringtoa simmerovermediumheat
thenreduceheattolowandcookuntil
tender(15minutes).Cool(30minutes)
thenstrain.Reserveoilforanotheruse.
3 Cooktomatoandspicesina
saucepanovermediumheatuntil
thickenedslightly(4-5minutes).Stirin
extra-virginoliveoilandseasontotaste.
4 Add10cmofvegetableoiltoa deep
frying pan and heat to 180°C. Lightly

crushpotatoeswiththepalmofyour
handtoflattenslightlyanddeep-fry,
inbatches,untilgoldenandcrisp
(6-7minutes).Transfertoa largebowl
withconfitgarliccloves,seasonwith
salttotasteandtosstocombine.
5 Layerpotato,garlicandtomato
sauceina servingbowl,thentopwith
aïoliandparsley.Drizzlewithextra
olive oil, season to taste and serve.➤
