4 orangesandjuiceof
½orange
220 gm(1cup)castersugar
500 ml(2cups)milk
1 cinnamonquill,
brokeninhalf
3 largeeggs
3 eggyolks
¼ tspalmondextract
PedroXiménez,toserve


1 Preheatovento160°C
(fan-forced). Placea 23cm-
ovalbakingdishina large
deeproastingtin.Combine
zestandjuiceina smallbowl
andsetaside( 5 - 10 minutes).
2 Heathalfthesugarand60ml
ofwaterina smallsaucepan
overmedium-highheatand
gentlyswirlpanuntilsugar
turnsa goldencaramelcolour
( 3 - 4 minutes). Pourcaramelinto
thebaseofthebakingdish.
3 Gentlywarmmilk,cinnamon
andorangezestandjuicein
a saucepanoverlow-medium
heatuntiljuststartingtosimmer.
Removefromtheheatand
setasidetocoolslightly.
4 Whiskeggs,eggyolks
andalmondextractinamixer,
thenaddremainingcaster
sugarandwhiskuntilcreamy
andpale.Strainorangemilk
intoeggmixture,whisking
tocombine.
5 Pourcustardintobaking
dishin a roastingpan,thenpour
enoughboilingwaterintothe
pantocomehalfwayuptheside
ofthedish.Bakeuntiltheegg
is justsetandstilla littlewobbly
in thecentre(40-50minutes;
gentlyshakethetinandif the
flanis firmaroundtheedgebut
stillhasa slightwobblein the
middle,it’sready.It will continue
to cook as it cools).


6 Removetinfromtheoven
andcarefullytransferthe
bakingdishtoa wirerack
tocool( 30 - 40 minutes).
Refrigerateovernighttochill
andallowtheeggtocompletely
setandmellowinflavour.
7 To unmould,runa sharpknife
aroundtheedgeofthecaramel,
placea lippedservingplateon
topandquicklyinvert.(Thetrick

outquicklysobereadytocatch

andsliceoffthetopand
bottom.Placetheorangeflat
ona choppingboardand,using
