Sean Connolly shakes up Bells at Killcare
The term international restaurateur may sound
lofty – but when one man is behind venues in
Dubai, Byron Bay, Sydney and Auckland, it’s an
appropriate title. Chef Sean Connolly continues
to expand his presence on NSW’s Central Coast,
taking over the kitchen and revamping the menu
at Bells at Killcare, with the rebooted restaurant
opening as The Wild Flower Bar & Dining.

Monty and Jaci Koludrovic head north
Following a stellar almost-six-year-run at Icebergs
Dining Room & Bar, the Koludrovics are moving to
the Byron Bay region. They’re keeping their plans
loose (though they’ve confirmed opening their
own restaurant is off the cards), but given Monty’s
flair for modern-Australian-Italian food and Jaci’s
pastry expertise, we’re looking forward to seeing
what they’ll bring to the Northern Rivers.

The (new) Old Clare
Chippendale’s very own boutique hotel has expanded with
a brand new wing opening at the tail end of 2019. What was
once the Silvereye restaurant has been transformed into
seven luxe, art deco-inspired rooms. Continuing the Clare’s
ethos of embracing the heritage of the space rather than
hiding it, the rooms feature blackbutt floors, banquettes
and Rag and Bone Man lamps retained from the former
restaurant. Clayton Wells is upping the ante with a custom
room-service breakfast menu, or pop over to A1 Canteen for
curried scrambled eggs with LP’s Quality Meats sausages,
