developedbyMirvac.“I immediatelyfell
inlovewiththeplace,”shesays.Formerly
knownasAustralianTechnologyPark,the
areais thelandoftheGadigalandis the
locationofIndigenousstart-upYerrabingin,
runbyChristianHampsonandClarence
Slockee,whohasknownKwongfora decade.
“ClarencemademyIndigenousclapping
sticksforBillyKwonginPottsPoint,”she
says.Thechefwouldstrikethemwhenan
orderwasreadyat herpreviousrestaurant.
Slockeetaughtherhowtomakeclapping
stickswithlemon-scentedgumtreebranches
fromSouthEveleighforherneweatery,

whichwilldrawonnativeingredientsfrom
Yerrabingin’srooftopgarden:fromnativeriver
minttothekarkallasucculentthatgrowslike
a carpetthere.Themenuwillfeaturethe
savourypancakesthatshecookedat thenearby
CarriageworksFarmersMarketsforsevenyears

involveorganisingfeastsandothereventsfor
