peppers,thinlysliced

HUMMUS
425 gmcannedchickpeas,
rinsedanddrained
2 largegarliccloves
2 tbsptahini
Juiceof1 lemon(ortotaste)
1 tbsp extra-virgin olive oil

1 Forhummus,blendchickpeas,
garlic,tahini, lemonjuiceand
50mlwater in a blendertoa
smoothpurée. Addoliveoil
andblenduntilverysmooth,
addinga littleextrawaterif
necessary,andseasontotaste.
Transfertoa servingbowland
refrigerateuntilrequired.
2 Heatoilin a fryingpanover
highheat.Addharissaandstir
untilfragrant(1 minute),then
addtomatoandcapsicum,and
fry,stirringoccasionally, until
tomatoandcapsicumstartto
blisterandsoften(3-5minutes).
3 Tophummuswithtomato
mixture,scatterovercumin,
pinenutsandherbs,andserve
