saltedwatertotheboilover
highheat.Addoctopus,bring
backtoa simmer,thenreduce

oilin a bowl,andmixtocombine.

2 Meanwhile,drainchickpeas
andaddtoa largesaucepan.
Addcoldwatertocover
chickpeas,bringtoa simmer
overmediumheat,andcook
untilchickpeasaretender
(40-45minutes).Setaside
tocooluntilrequired.
3 Heatoilina saucepanover
lowheat.Addgarlicandsauté
untiljusttender(1-2minutes).
Addchilli,paprikaandlemon
slicesandstirtocombine
(1 minute).Addoctopusand
stiruntilstartingtoturngolden
(2-3minutes).Removeoctopus
frompanandsetaside.
4 Drainchickpeas(reserve
water)andaddtopanwith
olivesand125mlreserved
water,seasontotasteand
simmeruntilchickpeasabsorb
halfoftheliquid(10-15minutes).
Toserve,seasontotaste,
stirthroughparsley,topwith
octopus,andsqueezeover
lemonjuicetotaste.
