60 ml(¼cup)extra-virgin
oliveoil
2 cinnamonquills
1.2 kgchicken,butterflied
andboned(seenote)
GRAPECACIK
100 gmgreengrapes,sliced
andseedsremoved
¼ cupchoppeddill,plus
extradillsprigstoserve
Finelygratedzestand
juiceof1 lemon
300 gmthickGreek-style
yoghurt or labne


1 Preheatovento220°C.
Combinegarlic,spices,mint
andhalftheoilin a bowl.Coat
chickenwithspicemixture
andseasongenerously.Place
chicken,skin-sideup,ontop
ofcinnamonin a roastingpan,
thenroastuntilgoldenand
juicesrunclearwhenthickest
partoffleshis piercedwith
a knife(25minutes).
2 Meanwhile,forgrape
cacik,combinegrapes,dill,
lemonjuiceandzestand
yoghurtina servingbowl
andtopwithdillsprigs.
3 Transferchickentoa board
(reservepanjuicesandgarlic)
andthicklyslice.Drizzleover
