A zingy green buttermilk dressing brings this salad to life.

2 corncobs,husksandsilksremoved
60 mlredwinevinegar
1 smallredonion,thinlysliced

½ cupcoriandersprigs,plusextra
sprigstoserve
1 garlicclove,finelygrated
1 jalapeñochilli,coarselychopped
Finelygratedrindof 1 lime,
plus2 tbspjuice
2 tbspoliveoil
125 ml (1/2 cup) buttermilk, well shaken
1 Combine1 tbspoil,1 tspsugar,garlic
andspicesina shallowdish,seasonto
tasteandstirtocombine.Patsteaks
drywithpapertowelthenaddto
marinadeandsetasideforflavours
todevelop(10minutes).
2 Meanwhile,heata char-grillor
barbecuetohigh.Grillcorn,turning
occasionally,untilcharred and tender
(8-10minutes).
3 Meanwhile,forgreenbuttermilk
dressing,combineingredientsexcept
buttermilkina largejugandblendwith
a hand-heldblenderuntilsmooth.Stir
inbuttermilk,seasonto taste and
refrigeratetochill.
4 Stirvinegarandremainingsugarin
a bowltodissolvesugarandseason
totaste.Addonionandgentlytossto
coat. Set aside for 5 minutes to pickle.
5 Grillsteaksuntilcharredandcooked
toyourliking(3-4minuteseachsidefor
medium).Setasideto rest (5 minutes),
thenthinlyslice.
6 Slicekernelsfromcornanddivide
amongplateswithcos,avocado,pickled
onionandsteak.Scatterwithextra
