250 ml(1cup)fishstock

500 gm(31/3cups)“00”flour,
sifted, plus extra for dusting

1 Forspaghetti, whiskegg
andsquidinkina bowl.Add
flouranda pinchofsalttoa
separatebowl.Createa wellin
thecentreoftheflour, pourin
eggmixtureand2 tspwater
andmixwitha forktoforma
dough.Turnoutontoasurface,
andkneaduntilsmoothand
elastic.Wrapdoughandrest
(1 hour).Dividedoughinto4,
thenworkingwithonepiece
ata time,anddustingwithflour
asnecessary,feedthrougha
pastamachine,startingatthe
widestsetting, rollingand
foldingonceortwice, then
reducingnotchbynotchuntil
pastais 2mmthick, thenuse
thespaghettiattachment(or
usea chitarratool)andcutinto
spaghetti.Dustwithflourto
preventpastastickingtogether,
coverandrefrigerateinsmall
moundsona trayuntilrequired.
2 Blanchtomatoesina
saucepanofboilingwater
untilskinssplit(20-30seconds),
then refresh iniced water.

wineglass.Addgin,lemon
juiceandsugarsyrup,top
withsodatotasteandgarnish
withrosemarytoserve.

and stir to dissolve.


Drainandwhencoolenough
tohandle,peelskin.Quarter
tomatoesandremovecentre
andcore, thendiceremaining
flesh.Refrigerateuntilrequired.
3 Cookspaghettiina large
saucepanofboilingsalted
water,stirringfrequently,until
cookedal dente(3-4minutes).
4 Meanwhile,combineolive
oil, garlic,chilliandcrabmeat
ina largedeepfryingpan
overhighheatandcook
untilcrabis justcooked
(1-2minutes).Deglazepan
withwine,scrapingbase,
thenaddfishstockandtomato.
5 Drainpasta(reservepasta
water), thenaddtosauceand
simmer(1-2minutes).Add
parsleyandbasil. Seasonto
taste,drizzleoveroiltotaste,
andstir,addingpastawateras
needed,untilsauceemulsifies
andthickenstocoatthepasta.
