Finelygratedzestof
2 lemons
2 tbspcoarselychopped
rosemary
Babyrocket,toserve
BRINE
80 gmfinesalt
60 gmbrownsugar

1 Forbrine,combinesaltand
sugarwith2 litreswaterand
stiruntildissolved.Pourover
chickenandrefrigerateto
brine(2hours).
2 Preheata barbecueorhibachi
grilltomedium,orgrillplate
overmediumheat.Remove
chickenfrombrineandpat
drywithpapertowel. Skewer
wingsontosoakedwooden
skewers or metal skewers.


3 Combinehoney,zestand
rosemaryina bowl.Grill
wings,brushingwithhoney
mixtureoccasionally,until
charredandcookedthrough
anda goldencharredroasted
glazehasbuiltuponthewings
(8-12minutes).Seasontotaste.
4 Meanwhile, cutzested
