topping.Firmlypressremaining
doughintothebaseandside

2 Forblackberryfilling,whisk
eggwhitesandsugaruntilsoft
peaksform.Foldinberries,
vanillaseedsandzestand
pourintothepiedish.
3 Crumblereservedpastry
doughoverthetopofthe
blackberryfilling.Bake
crumbleintheovenuntil
golden(about 50 minutes).

4 eggyolks
500 gm(31/3cups)“00”flour,
plusextrafordusting
2 tspbakingpowder
400 gmcastersugar
100 mlrum
Juiceandfinelygrated
zestof1 orange
Finelygratedzestof 1 lemon
175 ml vegetable oil


175 mlmilk
80 ml(1/3cup)eggwhites
(2-3eggs)
Grapeseedoilorvegetable
oil,fordeep-frying

1 Soaksultanasinwarm
water(1 hour).Drainanddry
onpapertowel,thendust
witha littleflourtoabsorb
any excess moisture.

2 Combineeggyolks,flour,
bakingpowderandhalfthe
sugar.Addrum,orangejuice
andzest,lemonzest,vegetable
oil,milkandsultanas,andbeat
untilsmooth.Whiskeggwhites
untilstiffpeaksform,then
foldthroughthebatter.
3 Heatgrapeseedoilin a
saucepanto180°C.Usinga
tablespoon,spoonthebatter
intothehotoil,in batches,
andcook,turningonce,until
brown(2-3minuteseachside;
becareful,hotoilwillspit).
4 Toserve,removefrittersfrom
oil and roll in remaining sugar.
