Fresh from his shortlisting for the inaugural World Restaurant
Awards, Josh Niland kicks off Sydney’s first Gourmet Institute
event for 2019. The Saint Peter chef will present his sweet
and sour blue mackerel, hand-picked spanner crab and crumbed
garfish with yoghurt tartare and herb salad on 10 April.

Gilmore has updated the neenish tart
of his childhood with a version that’s
encased in pastry made with pure
cocoa powder. It’s iced with two
Valrhona chocolate ganaches
from opposite ends of the colour
spectrum. At its launch, one in three
nostalgic guests ordered the tart.

From its base in the Colorado town of
Crested Butte, the luxury adventure outfit
Eleven Experience continues its global
expansion, opening in two new locations.
In a valley in the northern Aysen
region of Chilean Patagonia, the focus
is on “the ultimate fly-fishing adventure”
for guests who can wade in from the
front door of Rio Palena Lodge. The
seven-suite lodge is located on the
banks of a river of the same name,
famous for brown and rainbow wild
trout. And in the French Alps, Chalet
Hibou has six suites and panoramic
alpine views, with a steam room and
hot tub ready after book-end days spent
ice-climbing, dog sledding and heli-skiing
across the French-Italian border.
Founded in 2011, Eleven Experience
has nine lodges in Colorado, the
French Alps, Chile and Iceland,
and two “floating” lodges in the
Bahamas and the Louisiana Everglades.
The lodges are used as bases for
exceptional adventures ranging from
heli-skiing to wilderness cycling.
