(48%milkfat)
75 gm(1/3cup)caster sugar
5 eggyolks
1 tbspplainflour
2 tbspouzo
500 gmstrawberries,hulled
andhalvedlengthways
2 staranise
Scrapedseeds
of 1 vanilla bean
1 Preheatovento 200 °C
andplace 4 x 1-cup-capacity
ovenprooframekinsina
deeproastingpan.
2 Combinechocolate,cream
and1 tbspsugarin a saucepan
overmediumheatandstir
untilchocolatemelts(2 minutes).
Removefromheat.
3 Whiskyolks,flourand
halftheouzoina bowluntil
smooth.Addyolkmixtureto
chocolatemixtureandstir
tocombine, thendivide
amongramekins.Pourhot
waterintotheroastingpan
tocomehalfwayupsides
oframekins, thenbakeuntil
creamsarejustset(25minutes).
Setasidefor5 minutes.
