You’vegotmochi-ricerisottoonyourmenu.Whatinspiredthis?The
ideacamewhenI wasworkingatFlorilègein Tokyo.Glutinousmochirice
hasmoreumamithannormalriceandhasmoretexture.Usuallymochi
riceis steamedandthenmasheduptomakemochi,butwecookedit like
normalriceandaddedbonitoflakes,chickenandcuredegg.In Japan,
wehavea dishcalledtamagokakegohan,whichis whitesteamedrice
andraweggyolkwithsoysauce.I don’tthinkmanypeoplewilltryraw
eggwithrice,sowemadethatmoreapproachablebycuringtheegg.

Yourmenutakesa root-to-leafapproach.Tellusaboutthehomemade
furikakeseasoningthatyoumadefromleftoversatKuro.Wedon’t
thinkofit aswaste,butmoreasthingsthatpeoplethrowawaywithout
