750 ml(3cups)dashi(seenote)
175 gmbroccolini,trimmed

1 Cookeggsina saucepanof
simmeringwaterovermedium-
highheatuntilsoft-boiled
(6-7minutes).Drainandrefresh
undercoldwater,thenpeel
andcutintohalves.
2 Cooknoodlesin a large
saucepanofboilingwaterover
medium-high heat until just

tender(3-5minutes),drainand
refreshundercoldrunning
waterbriefly,thendrainwell.
3 Meanwhile,bringdashito
theboilin a saucepanoverhigh
heat.Addbroccoliniandsimmer
untiljusttender(1-2minutes),
thenremovebroccolini.
4 Adda fewdropsofoilinto
fourwarmservingbowls.Top
withnoodles,broccolini,egg,
tofuandchives.Seasondashi
withsalttotaste(noneedtodo
thisif youareusinga powdered
dashi),addsoysauceand
sake,bringtoa simmer,then
ladleintobowls.Season with
togarashiandserve.

Thisbraisedsilkentofurecipe,knownasyudofu,is anessential
dishofKyoto,traditionallypreparedandconsumedbyBuddhist
monks.Wintermelonbringssweetnesstothisversion– the
varietyyouchooseis upto you. Servesimply with rice.

125 ml(1/2cup)dashi

1/2 wintermelon,
coarselychopped
600 gmsilkentofu
