Wagyuis fairlyindulgentfora quickmeal,butit canbereplaced
withyourpreferredsteaksuchasgrass-fedsirloin.Inanycase,
makesurethepanis smoking-hotbeforeyoustartcooking.Pair
thesteakwithpickledcarrotsthatwillcutthroughtherichnessof
thebeef,andmakea mealofit byservingthesteakasa donburi
bowl (on top of rice) or with a Japanese-style potato salad.


2 wagyusirloinsteaks
(about200gmeach),
atroomtemperature
PICKLEDCARROTS
4 tbspapplecidervinegar
11/2 tbsplightsoy sauce
11/2 tsphoney
1 tspfinelygratedginger
4 carrots,cutintomatchsticks
2 springonions,thinlysliced
1 tsp sesame seeds

1 Forpickledcarrots,bring
vinegar,soysauce,honeyand
gingertotheboilina small
saucepanovermedium-high
heat.Placecarrotsina bowl,
thenpourhotliquidover.Toss
tocombineandsetasideuntil
cool.Stirthroughonionand
sesameseedsbeforeserving.
2 Heata fryingpanoverhigh
heat.Addsteaksandcook,
turningoccasionally,until
goldenbrownoneachside
(3-5minutes),thenreduceheat
tolowandturnoccasionally
untilcookedtoyourliking
(3-5minutesformedium-rare).
Setasidetorest(5minutes),
thenslice.Topwithpickled
