Yakiudonis a stir-friedizakaya-stylenoodledishfoundacrossJapan.
Herewe’vefinishedthenoodleswitha seasoningofnori– thedried
seaweedsheetsaretoastedovera flameandcrumbledoverforadded
textureandflavour.Charred cabbage makes a good alternative to the
mushrooms, too.


1 Formarinatedpork,
combinepork,soysauce
andoilina bowlandset
asidetomarinate(5minutes).
2 Meanwhile,boilnoodlesin
a largesaucepanofboiling
wateruntiltender(5-6minutes).
Drainwell,thenrinse.Drain
ina colanderuntilrequired.
3 Heata wokoverhighheat.
Addbutterandwhenhot,add
onionandfry,stirringoften,
untilstartingtoturngolden
(2-3 minutes). Scatter pork

490 gmdriedthick
udonnoodles
40 gmbutter
½ onion,thinlysliced
150 gmshimejimushrooms,
tornapart
100 gmchestnutmushrooms
(seenote),trimmed
3 tbspsoysauce
2 tspsesameoil
3 sheetsnori,toasted
overa flame
MARINATEDPORK
2 scotchfilletporksteaks
(about180gmeach),
thinlysliced
2 tbspsoysauce
1 tsp sesame oil


evenlyoverwokandcook
withoutstirringuntilsearedand
goldenbrown(1-2minutes),
thenstir-fryuntilalmostcooked
(1-2minutes).Addmushrooms
andtosstocombineuntil
startingtowilt(2-3minutes).
Removefrompanandsetaside.
4 Addnoodlestowokand
stir-frytoheat(1-2minutes),
thenaddsoysauceandoil,
andtosstocombine.Add
porkmixtureandtossto
combine.Crumbleover nori
totasteandserve.
