basedonanoldStephanieAlexanderrecipewhereshepairsbarbecued
kangaroowithananchovyvinaigrette.”Thisrecipealsoworkswellwith
beeforvenison.Theanchovydressingmakesdoublewhatyouneed,
but will keep refrigerated for three days and can be used to dress salads.

ANCHOVYDRESSING
25 gmanchovyfillets,
preferablyCucabrand
1 egg
¼ dillpickle,finelychopped
2 tspWorcestershiresauce
3 tspoystersauce
3 tsplemonjuice
3 tspapplecidervinegar
3 tspDijonmustard
½ garlicclove
125 ml(½cup)grapeseedoil

1 Foranchovydressing,blend
ingredients,exceptoil,ina
smallfoodprocessoruntil
smooth.Withtheprocessor
running,addoil,starting
witha fewdropsata time,
thenin a thinsteadystreamuntil
emulsified.Anchovydressing
willkeeprefrigeratedfor3 days.
2 Placewallaby,chives,shallot
andoliveoilina bowl,season
totasteandtosstocombine
well.Stirina littleanchovy
dressingtocoatanddivide
amongservingplates.Serve
withextradressingtotaste,
andtoppedwithpickles,
saladleavesandflowers.
