1 Rolloutpuffpastryon
a lightlyflouredsurfacetoa
40cmx 30cmrectangleand
refrigeratetorestuntilneeded.
2 Forsavourycrêpes,whisk
flour,milkandeggtogetheruntil
smooth,seasontotaste,then
whiskin20gmmeltedbutter.
Ruba littleoftheremaining
butterarounda largenon-stick
fryingpan,placeoverlow-
mediumheatandcarefullypour
in justenoughbattertomake
a thin20cm-diametercrêpe.
Cookforabout 45 seconds
tocolourlightly,thenflipover
andcookforanotherminute.
Removefromthepan.Repeat
untilyouhave4 crêpes
(reserveanyremaining
batterforanotheruse).
3 Layoutcrêpesona large
pieceofbakingpaperinto
a 35cmx 25cmrectangular
shapelargeenoughforthe
beeftofitdownthecentre,
overlappingthecrêpesin
thecentre.Coverthecrêpes
evenlywithspinach.
4 Heat30mloiloverhigh
heatina largefryingpan,add
mushroomsandseasonto
taste. Cook mushrooms, stirring,

untilthereis nomoistureleft
atall,thenaddMadeiraand
reducetoa gentlesimmer.
5 Heat15mloilina small
saucepanandsweatdown
shallots,garlicandthymeuntil
softened(about5 minutes),
thenaddtothemushroom
mixture.WhentheMadeira
hascompletelyreducedand
themixtureis almostdryagain,
removethepanfromthe
heatandquicklyscatterthe
mushroommixtureevenlyover
thespinach(theheatfromthe
mushroomswillgentlywiltthe
spinach).Whenthemushrooms
havecooled,gentlypatdown
tocompact.
6 Wipeoutfryingpanand
returnit tohighheat.Season
beeffilletwelltotasteand
ruballoverwithremainingoil.
Whenthepanis smokinghot,
carefullyaddthebeeffillet
andsearalloverfor 20 to
30 secondstogeta little
colourallover.Removefrom
panandlaylengthways
acrossmushroommixture.
Oncecooled,rubbeefall
overwithEnglishmustard.
7 Removepastryfromthe
refrigeratorandplaceonan
oventraylinedwithbaking
paper.Gentlydustoffexcess
flourandbrushliberallywith
eggwash.Rollcrêpes,spinach,
mushroom and beef into a tight

cigarshape(usethebaking
papertohelprolltightly)and
quicklyliftandtransfertolie
widthwaysacrossthebottom
ofthepastry.Rolltheparcel
upwardstoencloseit inpastry,
keepingpastrytight,untilthe
seamis acrossthebottomwith
about3cmofoverlappedpastry.
Trimoffanyexcess.
8 Carefullycrimpdowneach
endoftheWellingtonandtrim
it sothatthereis justenough
pastrytotuckbackunder
itself(anyremainingtrimmed
pastrycanbeusedtodecorate
thetop).Brushalloverwith
eggwash.PlaceWellingtonin
therefrigeratorfor2 hoursto
restandchill,thenremoveand
givea finalbrushwitheggwash
andscatterwithseasalt.
9 Preheatovento185°C.Bake
Wellingtonuntilpastryis golden
andmeatis cookedtoyour
liking(40-55minutesforrareto
medium-rare).SlideWellington,
stillonthebakingpaper,onto
a wirerackandrestforatleast
25 minutesbeforeslicingwith
a sharpserratedknife.Serve
withgravyandroastpotatoes.
NoteMixedwildmushrooms
areavailablefromselectgrocers
andfarmers’markets.Substitute
soakeddriedwildmushrooms.
If chestnutmushroomsare
unavailable, substituteSwiss
brown mushrooms.

vegetables and crackan

2 minutesthentransfertogrill
orovenfora further2 minutes
untilthetopsofeggsaresetbut
they’restillrunnyin thecentre.
