500 ml(2cups)doublecream
(35%-45%fat;seenote)
2 vanillabeans,split
10 eggyolks
150 gmcastersugar,
plusextratoserve
(about 100gm)

1 Preheatovento140°C(or
100°Chalf-fanif youhavea
combioven).Pourcreamintoa
saucepan,addvanillaandheat
untiljustbelowboiling.Whisk
eggyolksandsugartogether
in a heatproofbowl,thenpour
hotcreamovereggs,stirring
well.Strainintoa jug.
2 Pourstrainedmixtureinto
6 flatbrûléedishes.Placedishes
in a largeroastingtrayandpour
hotwaterintothetraytocome
abouthalfwayupthedishes.
Bakeuntilthecustardsare
just set with a slight wobble

in thecentre(35-45minutes).
Removefromoven,cool,then
refrigerateforatleast3-4hours
tochillandset.
3 Toserve,sprinklesugar
overthetopofeachdishand
shake offtheexcess.Gently
caramelisethesugaralltheway
aroundwitha kitchenblowtorch
untilgoldenandcrisp.Work
quicklytoavoidmeltingthe
brûlée.Serveimmediately.

creamcanbefoundonthe
backofthepacket.UseBulla

2 squid,cleaned
50 mloliveoil
4 garliccloves,thinlysliced
1 onion,diced
600 gmtomatoes,finely
chopped
11/2 tbspsweetsmoked
paprika(ortotaste)
Generouspinchofsaffron
(optional)
500 gmdriedpasta,suchas
stortinibucati
1 litre(4cups)chicken
orfishstock
12 largegreenprawns, peeled,
tailsintact
250 gmclams
12 mussels


1 Removethetentaclesfrom
1 squidandcutthehoodinto
smalldice.Cutsecondsquid
intowidestrips,scoringhood
andremovingtentacles.Cut
tentaclesinhalfandreserve.
2 Heat30mloilin a shallow
paellapanovermediumheat.
Adddicedsquidandcook
quickly,lettingit sizzleand
colourlightlyonbothsides.
3 Addgarlicandoniontopan
witha littlemoreoilif needed.
Addtomatoesandtheirjuice,
andcook,stirringfor2 minutes,
thenstirin paprika,saffronand
pasta.Roastfora minute,then
pourin stock,seasonwith
salttotaste,bringtotheboil
andcookfor8 minutes,or
untiltwo-thirdsoftheliquid
hasevaporated(donotstir
againuntila finecrusthas
formedonthebase).
4 Meanwhile,warmremaining
oilin a shallowpan,addstrips
ofsquid,tentacles,andprawns.
Cookfor2 minutesuntillightly
browned,thenremovefrompan.
5 Placeclams,mussels,squid
andprawnsoverpasta,make
a loosedomeofaluminium
foiloverthepanandleaveto
steamfor2-3minutesuntil
themusselsandclamshave
opened. Serve immediately.
