withbeekeeperparentswhoroseatdawntocheckthequeenand
brood.“I wasfascinatedathowbeesworktogetherinlightand
darkness,howtheycommunicatewitheachother,”Wyszynskisays.
Hewentontostudyatapiaristschoolandlaterlecturedonqueen
beeproductionandworkedasa beekeeper.
WhengiventhechancetoworkwithbeekeepingsupplierBrowns
BeesAustralia,hemigratedwithhiswifeReginaandtheiryoung
daughter.“InPoland,theseasonis onlythreetofourmonthslong
becauseofthecoldwinters,”hesays.“Australiahasa greatclimate
forbeeswitha year-roundseason.”
Wyszynski,Reginaandtheirdaughters,JoannaandMaya,runthe
familybusiness,MayaSunnyHoney.Theyhave 150 beehivesontheir
farminMudgee,eachhivehousingabout40,000bees.“I fellinlove
withthelocallandscape,therollinghillsandthenativebees,”hesays.
“OurhoneycapturespurenatureDownUnder.”
Hivesarepositionedbesideblossomingnativesincludingwattle,
orangegumandironbark,andthehoneyis collectedusinga unique
technique:glassjarsareplacedupside-downontopofthehives,
andabout 500 beesentereachjartocreatehoneycombinside.
Wyszynskibelieveshoneyis “asuperfoodthateveryoneshould
havein theirkitchen”,helpingtoreduceinflammation,improvedigestion
