therearea numberofotherthingsthatcontribute.Wethoughtreallyhard
abouthowwewantedtodothesepacks,aswellasthetakeawayand

grownupeating.A lotofit is basedonthatfamilytaste,especiallyfor
thingslikekimchi– it’sjusta realstaplethat’sveryfamilyorientated.
WhatarethemostpopularspicesusedinKoreancooking?
Ourmainspiceis gochugaru,whichis madefromsun-driedchillies,
andliterallytranslatestochillipowder.It bringsa hot,sweetandsmoky
flavourtodishesandI thinkthisis whatsignificantlydistinguishes
KoreanfromotherAsiancuisines.MostAsiancuisinesuseingredients
likesoysauce,garlic,gingerandfishsauceaswell,butgochugaruis
distinctlyKorean.There’s also gochujang, which isn’t so much a spice
asit is a chillipaste.
Whatgoesintoyourspicyporkbellydish,jaeyuk?Thebaseis
gochujangandthat’sthemainflavourofit. Butthere’salsoa lotoffruit
juice,likeprocessedpineapple,whichsoftensthemeatmakingit very
tenderandmoreish,andbringsa balancedsweetness.Butthemain
