300 gmbasmatirice,rinsedwell
500 ml(2cups)hotchickenstock
2 largepinchessaffron
threadsmixedwith1 tbsp
boilingwater
Coriander,coarsely
chopped,toserve
Lime wedges, to serve

1 Preheatovento 250 °C.Roast
cashewsona trayuntilgolden
(5minutes),thensetaside.
2 Meanwhile,heatgheeina
casseroleovermedium-high
heat.Addonionandspices
andstiroccasionallyuntiltender
andstartingtocaramelise
(5minutes).Addriceandstir
tocombine,thenaddstockand
saffronandbringtoa simmer.
Stir,seasontotasteandcover
withfoil,thenbakeinovenuntil
liquidis absorbedandrice is
tender(10-12minutes).

andservetoppedwithcoriander
and lime wedges to the side.
