cold water (30ml)

5 large (about 1.4kg) Desiree
potatoes, peeled and
halved

1 Preheat oil in a casserole dish
over medium-high heat. Fry
chicken, turning occasionally
until golden (about 10 minutes).
Remove from the pot and set
aside. Add vegetables and
garlic, and stir occasionally
until onion is translucent (5-7
minutes). Add stock and bring
to the boil, adding a bay leaf if
you like. Mix through cornflour
slurry and continue to stir until
thickened and cornflour cooks
out (10-15 minutes). Add
reserved chicken, season to
taste and pour mixture into a
24cm pie dish. Refrigerateuntil
chilled (4 hours, or overnight)

to taste and set aside.
3 Preheat oven to 200°C.
Remove pie mould from fridge,
and spread potato mixture over
chicken. If the filling is not cold,
the potato will sink. Smooth
top with a spatula, then create
a pattern with a palette knife
to help crisp the top. Bake
pie until bubbling and golden
brown (35 minutes). Remove
from oven and cool for 10
minutes, then serve seasoned
with salt flakes on top. ●
