SERVES2 ASA MAIN,OR4 ASA STARTER

Thisis a simplebutindulgent
recipe– onefora special
occasion.Wecreatedit for
Diwalioneyear.Forease,the
recipeusesshelledcrabmeat,
butyoucanstartwitha whole
crab,if youprefer:a 1-1.2kg
crab is perfect for two.

75 gmbutter
3 largegarliccloves,finely
chopped
1 tspfreshlygroundblack
pepper
2 cmpieceginger,finely
chopped
1-2 greenchillies,finely
chopped
4 springonions,trimmed
androughlychopped
300 gmcrabmeat
3 dillsprigs,leavesonly,
roughlychopped
1 tbsproughlychopped
corianderleaves
1 tbsplimejuice
Corianderleaves,spring
onion,greenpartonly,
thinlysliced,andlemon
wedges,toserve
4 softwhitebuns,halved,
toastedand buttered,
to serve

1 Heata fryingpanover
mediumheat.Addbutter
andgarlicandfryuntillight
goldenbrown(5minutes).
2 Addpepper,ginger,chilli
andspringonions,turnheat
tohighandsautéuntil
fragrant(1 minute).
3 Addcrabmeatwith2 tbsp
waterandsautéuntilwarmed
through( 2 - 3 minutes). Add
remainingingredients(except
garnishesandbread)and
sautéuntilcombined(1 minute).
4 Transfertoa plate,scatter
overcorianderandspring
onionandservewithlemon
wedges and buns on the side.
