Mulletis sounderratedandgivesgreatvalueformoney.Roast
filletsina pantocrispuptheskin,pairthemwitha quickolive
salsa, and round it out with roasted potatoes. Simple, and delicious.

150gmeach)

8 largegreenolives,

Juiceof1 lemon(or
totaste)
50 mlextra-virginoliveoil
Handfulofflat-leafparsley,
coarsely chopped

1 Preheatovento 250 °C.For
olivesalsa,combineingredients
ina bowlandseasontotaste.
2 Preheata largeovenproof
non-stickfryingpanora
well-seasonedcast-ironpan
overhighheat.Drizzlepanwith
oilandcookfish, skin-sidedown,
untiljuststartingtoturngolden
(1-2minutes). Transferpanto
ovenandroastuntilmulletis
justcookedthrough(4minutes).

spinonchanamasalaa breeze.Thespicesherearewarmand
bright,andwitha bowlofsteamedbasmatiriceorflatbread,
this is a dish geared towards heft and comfort.

60 gmghee
1 onion,finelychopped
1 tbspgarammasala
2 tspturmeric
1 tspcorianderseeds,crushed
25 gm(about5cm)ginger,
finelychopped
2 garliccloves,crushed
800 gmcannedchopped
tomatoes
300 mlchickenstockorwater
800 gmcannedchickpeas,
drainedandrinsed
Handfulofchopped
coriander,pluscoriander
sprigs,toserve
Greek-styleyoghurt,
steamedbasmatirice
(optional)and lime wedges,
to serve

1 Heatgheeina saucepan
overmedium-highheat.Add
onionandstiruntilalmost
soft(6-8minutes).
2 Addgarammasala,turmeric
andcorianderseeds,andstir
untilfragrant(1 minute), thenadd
gingerandgarlicandstiruntil
fragrant(1 minute).Addtomato
andstock, bringtoa simmer,
seasontotasteandsimmeruntil
thick(5minutes).Stirchickpeas
throughsauceandsimmeruntil
heatedthrough(5minutes).
Seasontotaste.
3 Stirchoppedcoriander
