&Cowastodotop-endfinedininginMelbourne
witha reallyrelaxedenvironmentanda more
casualapproach,”hesays.“Weweren’tabout
neglectingprofessionalismorservicequalityor
good-qualitytablewareoranythinglikethat.We
justwanteda friendlier,morecasualapproach


totheservice,andthefoodaswell.
“Itwasallaboutevolvingtomeetthechanging
needsofhowourcustomerswantedtodine.
If theywanteda fine-diningexperienceora
dégustationtheycouldhavethat,buttheycould
alsocomein,sharea steakorsomeduckwith
a glassofwine,orturnupandeata dessertlike
theappleterrineat theendofa nightout.
