(seenote),scrubbed
220 gm“00”flour
75 gmparmesan,finely grated

1 egg
1 eggyolk

150 mldrywhitewine
2 goldenshallots,sliced
1 freshbayleaf
6 blackpeppercorns
250 ml(1cup)chickenor
vegetablestock
500 ml(2cups)pouringcream
150 gmgood-quality
Gorgonzola,crumbled
½ lemon
1 bunchsilverbeet, washed
anddried
50 mloliveoil


1 Preheattheovento180°C.
Spreadrocksaltthicklyover
a bakingtrayandsitpotatoes
ontop.Bakeuntilverytender
whenpiercedwitha knife
(1-1½hours).
2 Cutpotatoesinhalf
lengthways,scoopoutfleshand
passthrougha mouliorpotato
ricerintoa largebowl.Whilestill
warmaddflour,parmesan,oil,
eggandeggyolk.Seasonwith
nutmegandsalttotaste.Gently
mixtoforma doughandturn
outontoa lightlyfloured
surface.Divideinto4 portions,
rolleachportioninto2cm-thick
logsandcut2cmpieces.
3 Meanwhile,forGorgonzola
andsilverbeetcream,combine
wine,shallot,bayleafand
peppercornsin a saucepan
overmediumheat,bringto
theboilandreducebytwo-thirds
(7-8minutes).Addstockandboil
until reduced again by two-thirds

4 Separatesilverbeetleaves
fromstalks.Thinlyslicestalks
onanangle4cm-5cmlongand
finelychopleaves.Heatoilin
a largedeepfryingpanover
highheatandsautéstalks
untiljusttender(2-4minutes).
Reduceheattomedium.
AddGorgonzolacreamand
leaves,andstiroccasionally
untilheatedthroughandthe
leavesaretender(2-4minutes).
5 Meanwhile,cookgnocchiin
batchesina largesaucepanof
boilingsaltedwateruntilthey
justfloat(2-3minutes).Remove
witha slottedspoon,addto
Gorgonzolaandsilverbeet
creamandstirtocoat.
6 Seasontotaste,thinwitha
littlecreamif sauceis toothick
andserveimmediately.
