1 goldenshallot,
finelychopped
2 tbspmaltvinegar
3 blackpuddings(200gm
each),eachcutinto4 equal
lengths(seenote)
500 ml(2cups)beefgravy,
preferablyhomemade
150 gmbeefdripping,melted,
plusextratoserve
Freshhorseradish(see
note),grated,toserve
YORKSHIREPUDDING
300 mlwholeeggs
(approx6 eggs)
130 gmplainflour
300 mlmilk
HORSERADISHCREAM
50 gmTracklements
Horseradishrelish(see note)
200 gmsourcream
1 tbspmilk
1 tbsp olive oil


1 Forthepuddingbatter,whisk
eggsthoroughly.Placeflourin
a bowlandmakea wellinthe
centre.Addeggsandwhisk,
graduallyaddingmilkwhile
whiskingtoensurethereare
nolumps.Pourbatterthrough
a fine-meshedsieveintoa bowl,
thencoverandrefrigerate
overnight.Thenextday,remove
fromthefridgeatleast1 hour
beforeusing.Add1 tspfine salt
andwhisktocombine.
2 Forhorseradishcream,whisk
horseradishrelish,sourcream,
milkandoilina bowl.Season
wellwithsaltandpepper.It
shouldbethickandrunny.
Refrigerate until required.

3 Preheatovento220°C.
Combineshallotandvinegar
witha pinchofsaltina small
bowlandsetasidetopickle.
4 Placea non-stickfryingpan
overmediumheatandcook
bloodpuddings,inbatches,
onbothcutsidesuntilsealed
(1 minute).Setaside.
5 Placegravyina saucepan
overmediumheat.Addpickled
shallotwithitsliquidand2 tbsp
dripping,andseasonwith
pepper.Bringtoa simmer,
thensetaside.Keepwarm.
6 Placea 12-hole½-cup
capacitymuffintinona large
bakingtrayandpreheatinthe
oven (10 minutes). Remove tin

anddivideremainingdripping
amongmuffinholes.Return
toovenuntilhot(5minutes).
7 Workingquickly,pour
puddingbatterintomuffin
holes,keepingthestreamof
batterascentralaspossible.
Placea pieceofblackpudding
inthecentreofeachfilledhole,
thenbakeuntilpuddingsare
goldenbrownandatleast
tripledin size(15minutes).Keep
ovendoorclosedwhiletheyare
bakingtoensuretheypuffup.
8 Removetinfromtheoven,
brushpuddingswithextra
drippingandtopwithgrated
horseradish.Serveimmediately
witha jugofgravyand
horseradishcream.
